Cooking a top sirloin steak is straightforward, and you can achieve a delicious result whether you’re grilling, pan-searing, or broiling. Here’s a simple guide for each method:

Grilling:

  1. Prepare the steak: Remove the steak from the fridge and let it rest at room temperature for about 30 minutes before grilling. Season it generously with salt, pepper, and any other spices you like.
  2. Preheat the grill: Preheat your grill to medium-high heat. If using charcoal, wait until the coals are glowing red and slightly ashy.
  3. Grill the steak: Place the steak on the grill and cook for about 4-6 minutes per side for medium-rare, depending on thickness. For medium, aim for about 6-7 minutes per side. Flip the steak once and avoid pressing down on it while cooking.
  4. Check doneness: Use a meat thermometer if you're unsure. For medium-rare, the internal temperature should be 130-135°F, and for medium, it should be 140-145°F.
  5. Rest and serve: Let the steak rest for 5-10 minutes before slicing to allow the juices to redistribute.

Pan-Searing (Stovetop):

  1. Prepare the steak: Let the steak sit at room temperature for 30 minutes. Season with salt, pepper, and your choice of herbs (rosemary, thyme, garlic powder).
  2. Preheat the skillet: Heat a cast-iron or heavy-bottomed skillet over medium-high heat. Add a tablespoon of oil (like vegetable or avocado oil).
  3. Sear the steak: Once the pan is hot, place the steak in the pan. Cook for 4-5 minutes per side for medium-rare, or adjust time depending on your preferred doneness.
  4. Optional butter baste: During the last minute of cooking, add a couple of tablespoons of butter, a sprig of rosemary or thyme, and a smashed garlic clove to the pan. Spoon the melted butter over the steak for extra flavor.
  5. Check doneness: Use a thermometer to check the internal temperature, aiming for 130-135°F for medium-rare, or 140-145°F for medium.
  6. Rest and serve: Let the steak rest for 5-10 minutes before slicing.

Broiling (Oven):

  1. Prepare the steak: Let the steak come to room temperature for 30 minutes and season it with salt and pepper.
  2. Preheat the broiler: Set the oven to broil and preheat it for 5-10 minutes. Place the rack 4-6 inches from the broiler element.
  3. Broil the steak: Place the steak on a broiler pan or a baking sheet. Broil for about 4-5 minutes per side for medium-rare, depending on thickness. Adjust the time for your desired doneness.
  4. Check doneness: Use a meat thermometer to ensure your steak reaches the correct temperature (130-135°F for medium-rare, 140-145°F for medium).
  5. Rest and serve: Let the steak rest for a few minutes before slicing.

Tips:

  • Always let your steak rest before cutting to preserve its juices.
  • You can finish the steak in the oven (at 400°F) after searing if you prefer a more even cook throughout.

Enjoy your perfectly cooked top sirloin steak!
